Recipes from Brixton Village - Paulina's cake

Paulina is the brain behind the lovely Sponge&Cream in Brixton Village. Cake and community are one and the same for her. When I met her, tempted by her cakes during one of my lunch breaks, she told me: “My earliest memories of baking take me back to when I was 7 years old, baking cakes for my family. I clearly remember baking banana bread loaves. Lots of them."

Later on, it was Paulina’s neighbours' turn. They became her favourite guinea-pigs, with her worst mistake being “pouring a whole bottle of vanilla extract into one cake mix. I was pleased when the neighbour said they loved it.” Here, Paulina shares a foolproof recipe inspired by the tastes and ingredients of Brixton Market. It uses coconut, carrot, and cinnamon, only 30 minutes and it’s best enjoyed with a cup of herbal tea!

Paulina's Sugar-free Coconut & Carrot Mix

Cake Ingredients:

  • Unsalted butter   750g
  • Agave syrup       450g
  • Vanilla extract     3 tsp
  • Eggs                   9
  • Self-rising flour   600g
  • Desiccated coconut (fine)   150g
  • Salt  ¾ tsp
  • Ground cinnamon 3 tsp
  • Grated carrots  600g

Icing Ingredients:

  • Philadelphia cheese    560g
  • Double cream              600ml
  • Agave syrup                100g
  • Ground cinnamon        1 tsp
  • Vanilla extract              ½ tsp

Instructions:

1. Put all the cake ingredients into a large mixing bowl and mix by hand until all ingredients are incorporated. Do not over-mix. Pour into two 10”x10” baking pans and bake for 25 minutes on 160 degrees centigrade.

2. Using an electric mixer, mix all the icing ingredients together until smooth and silky. Use to sandwich the two sugar-free cakes together. Cut the cake up into 2”x2” cube.

3. Enjoy with a cup of herbal tea!
